Food • Eggplant Mini Casseroles
Eggplants is one of those food/ingredients I learned to eat. I used to hate it! Along with onions and green peppers. There are so many ways to prepare certain foods that sometimes you will not even know that is made out of ingredients you particularly will not choose at the grocery store. My love for eggplants started at a friend's wedding I attended. Among the various dishes she provided at the buffet table, there was this delicious dish that tasted like some sort of exotic type of pizza (it was flat) I even think I had seconds. When I asked what is this dish? The chef said to me: It is eggplant Parmesan. I was amused, I could not believe that I ate eggplant that night and had seconds!! After that, I told myself to just try other things and mix them with ingredients I already love, like cheese. Here I am showing my version of mini eggplant casserole and believe me it has plenty and plenty of cheese. Just delicioso!!
