Food • Pastelon de Potatoes
Or as we call it in the Dominican Republic 'Pastelon de Papas'
This very delicious dish is a Dominican staple at least in my household. It is usually made when we have guests or just whenever you want to make your table look special. I love it and, now living in the Phoenix area, I make it very often so I don't feel I'm missing out on my Dominican food.
It is basically mashed potatoes, mixed with lots of butter and cheese, some milk to make the potatoes creamy, an egg or two depending on the size you are making and I add a can of cream style sweet corn and a can of mixed vegetables. The assembly of it is like a lasagna, so you put your first layer of the potato mix in the baking dish, then the filling can be ground beef or chicken or vegetables or whatever you feel like (sometimes I just put cheese on top of cheese, but that's just me) put your second layer of the potato mix and top it off with some shredded cheese. Since everything is already cooked, you put it in the oven for about 35 minutes or until golden. Enjoy!
