




There’s nothing quite like the comfort of a traditional Dominican meal, and today I’m sharing one of my favorites, simple, flavorful, and full of memories.
This classic trio of fluffy white rice, tender marinated chicken, and creamy black beans is the kind of dish that brings everyone to the table. It’s easy to make, incredibly satisfying, and made with ingredients most of us already have at home.
Whether you’re Dominican or just love authentic Caribbean home cooking, this recipe will give you that cozy, homemade taste we all crave. Enjoy it, print it, share it. This one’s straight from my kitchen to yours.
Traditional Dominican Plate: Arroz Blanco, Pollo Guisado-Style, y Habichuelas Negras or Rojas
White Rice (Arroz Blanco) – Rice Cooker Method
Ingredients:
- 2 cups white rice
- 2–2.5 cups water (depending on your rice cooker)
- Salt to taste
- 1 tsp oil (optional)
Instructions:
- Rinse the rice until the water runs mostly clear.
- Add rice, water, a pinch of salt, and oil to the rice cooker.
- Turn on the cooker and let it finish.
- Fluff with a fork when done.
Marinated Chicken (Pollo)
Ingredients:
- Chicken pieces (legs, thighs, or mixed)
- Salt & black pepper to taste
- 1–2 tbsp vinegar
- 2–3 garlic cloves, mashed or minced
- ½ onion, sliced
- ½ bell pepper (any color), sliced
- A drizzle of olive oil
Instructions:
- Place the cleaned chicken in a bowl.
- Season with salt, pepper, vinegar, garlic, onion, peppers, and olive oil.
- Mix well and let marinate for at least 30 minutes (longer if possible).
- Stovetop: Brown the chicken in a pot with a little oil, then cover and cook until tender.
Dominican Black Beans (Habichuelas Negras)
Ingredients:
- 1 can black beans (or cooked beans)
- ½ green pepper, chopped
- ½ onion, chopped
- 2–3 garlic cloves, minced
- A handful of cilantro, chopped
- Salt & black pepper to taste
- ½–1 cup water (adjust for thickness)
- 2–3 tbsp tomato sauce
- Olive oil
Instructions:
- In a pot, sauté the green pepper, onion, garlic, and cilantro in a little olive oil until fragrant and soft.
- Blend half the can of black beans to create a creamy base.
- Add the blended beans to the pot, then stir in the remaining whole beans.
- Add the tomato sauce, salt, and black pepper.
- Pour in water until you reach your desired consistency.
- Simmer on medium-low for 10–15 minutes, stirring occasionally, until it thickens.
